It took me a while to evolve the approach that I now use in my Poetry Fishbowls: the Fishbowl Open Post gets updated with replies to comments in which I give a 'thumbnail' summary of the poem based on that prompt, then I do a followup report after the fishbowl closes which lists all the posted poems and other supporting materials, and the landing page is a separate permanent post with all the background detail on the project which is periodically updated to list the new materials.
djinni does something a bit different with the Free Icon Days; the individual icons do get posted as comment replies, but there is usually another new post at the end of the rendering period that shows all the art from that FID.
Look at different projects, consider various people's suggestions, but don't be afraid to experiment until you find the version that works for you. If you're going to leave your sessions open-ended until you get enough prompts to hold you for a while, then you may need a slightly different structure than those of us who do these things on a set schedule with limited timing. The first 2-3 rounds can involve a lot of groping around but then you get a feel for what you need.
